In 2017, one woman went viral after posting a picture of a $5 bill she received along with a note from the cook at a pizza place that couldn’t bear to honor her request to add pineapple, and I personally know at least a couple of ornery Italian-Americans who operate their own establishments in Brooklyn who would tell you to leave their shop if you asked for it. According to CNN, Lupa Pizza in Norwich, England technically offers pineapple pizza on a menu where a regular pie will set you back around $12, but they’ve opted to charge a whopping £100 (~$122) for the Hawaiian pizza that’s accompanied by a message that reads “Yeah, for £100 you can have it. Order the champagne too! Go on you Monster!” on its menu. The publication interviewed Quin Jianoran, the head chef of the restaurant, who remarked, “We’re simply taking a stand,” adding that no one has been brave enough to order the expensive pizza that has attracted significant attention since it went viral online. How to Enjoy Surströmming, Sweden's Most Notorious Fish

Several have gone viral and feature a person or people eating a Swedish food called surströmming, a very unique type of fermented Baltic sea herring that's sold in a tin. The challengers are often in an enclosed room and eat the fish directly from the can, both of which are mistakes. You see, surströmming is notoriously smelly. People have described it as smelling like everything from dead bodies to public toilets. It is often listed amongst the world's most challenging things to stomach (literally and figuratively), along with hákarl — a meat Anthony Bourdain tried once and refused to ever eat again – and a maggot-filled, Sardinian cheese called casu marzu. The thing is, surströmming is a traditional Swedish fish dish that's been around for hundreds of years, and many people enjoy it and appreciate it as a part of Swedish culture, despite its over-the-top funk. Part of enjoying it, though, is knowing how to eat it correctly.  A crucial aspect of enjoying surströmming is ensuring that the fish is properly prepared, but we'll delve into that shortly. To get ahead a bit, the ideal way to savor surströmming isn't to eat it straight from the can; instead, it pairs best with traditional Swedish sides. You should serve small pieces on a type of Swedish flatbread known as tunnbröd, accompanied by chunks of boiled potatoes, crème fraîche, diced red onions, and fresh herbs like dill or chives. It's customary to wash down each bite with drinks such as beer and schnapps, as they not only enhance the flavors of the fish but also because surströmming is a seasonal dish often enjoyed at festive gatherings known as surströmmingsskiva. As such, surströmming is really something that you should eat outdoors. Plan to set it up as part of a picnic on a nice day (a little wind won't hurt either). Surströmming comes in pressurized cans, so open it carefully and away from you because the liquid inside does spray out sometimes; getting the foul smelling liquid on your clothes would be unfortunate to say the least. Some people advise that the can should be opened underwater because the water will catch a lot of the odor. This technique has the added benefit of rinsing the filets right away which is a step you should always complete before eating the fish. If your surströmming can contains just the fish filets, you can eat them right away, but if you have whole fish, you'll need to remove the entrails and separate the filets from the backbone. Despite the pungent aroma, surströmming is often described as tasting much milder than it smells. That being said, it still boasts strong notes of salt, acid, and umami. The fish is harvested in the spring when the herring is plentiful. Catching the fish at this time of year also ensures that it ferments in the warmest temperatures. In other words, producers want its funk to be maximized. If you're going to try it, do it the right way. And if surströmming just isn't for you, we'd suggest you try something a little less pungent like a Swedish hot dog.

Myrick recalled her father letting her cook for her aunts and uncles at the restaurant. She loved the instant gratification she received after they ate her food. A chef has taken TikTok by storm after revealing an unexpected treasure he stumbled upon in the home and garden aisle of Walmart: Kinder’s seasoning rubs and spices. Corey (@livefromthekitchen_), a traveling private chef, said he was shopping at Walmart when he noticed something odd in its gardening section. As of Tuesday, his video elaborating on his find had amassed more than 130,700 views. “Did y’all know Walmart had these?” Corey asked viewers as his camera panned over a wall of Kinder’s seasonings and rubs. “Am I the only person who didn’t know this?” Walmart offers a variety of seasonings in the gardening department. Corey and numerous other Walmart customers claim that these spice rubs are essential items found in the home and garden department of Walmart. On one hand, this is quite logical. After all, Walmart has its outdoor grills displayed in a nearby area. Therefore, customers interested in smoking or grilling meat probably require some seasonings for the dishes they plan to prepare. Nonetheless, Corey conveyed a sense of astonishment and wonder regarding his discovery.  "I guess this is a sign of my age, considering how thrilled I get over things like this," he remarked. He mentioned Kinder’s Greek blend barbecue rub, along with its habanero pineapple, citrus and garlic mixed with jalapeño, smoked onion, and black cherry chipotle. In his video, Corey suggested that some of these seasonings were “new” or he wasn’t aware of their existence. If you can’t make it to the store in person, though, Walmart sells many of the same flavors online. While prices may vary by state, most six-ounce bottles cost roughly $5, and at least one of the brand’s slightly larger bottles (which was eight ounces) cost about $14 online. Surprised by this discovery, the chef inquired if other Walmart customers were aware that the store offered Kinder's brand seasonings in bulk. "Hey, did you guys realize these were hidden back here?" he inquired. What exactly is Kinder’s?  The California-based company is recognized for offering a variety of blends, marinades, rubs, and spices. To help out customers who don’t know what to prepare, Kinder’s website even has a page of recipes utilizing its various seasonings. In November, a reporter for Tasting Table tried and ranked 13 seasonings she said she was sent by Kinder’s.  Certainly, it appears that the brand has made a positive impact on the author.  "While each of them was certainly good, there were a couple that truly amazed me with their impact," she noted. "I was even taken aback by how impressive the company's basic seasonings were."  For those who want to try Kinder’s for themselves, Walmart isn’t the only retailer to sell Kinder’s products. In the part of Nigeria where I come from, women are known for their culinary prowess and I could not escape that. I was the one that was in the kitchen most of the time. Yes, I have a sister, but the whole responsibility of taking care of the kitchen and helping mom in the kitchen rested on me. AFRO: Can you share your journey of moving from a science-focused role in the food industry to working in marketing and media? IU: For about 35 years I was working for a company and I was actually in marketing. It was a food company– 35 years of my life was around food, but I was using marketing for food, which was more or less understanding the media and how to promote food.  As I approached retirement from my regular nine to five job, I thought to myself, “The best move now is to immerse myself in the culinary world.” I had started food blogging shortly before my retirement.  Upon my retirement, I dedicated myself entirely to food blogging, marking the beginning of my full-time journey in the culinary media world. My travels throughout Nigeria during my previous work made the transition into food blogging a seamless one for me. AFRO: Congratulations on your new book! I’d love to hear more about it. What was the inspiration behind “Memories on a Platter: My Journey with Nigerian Food”? IU: When I started food blogging, I started clearly seeing the gaps that were in the food space in terms of documentation. But just to backtrack a bit, I had my mom stay with me for about two years before she passed and as I was still building recipes and posting and all of that I asked her to share with me a recipe I remember from my childhood that my grandmother used to make. And by this time, my mom was 90 herself and she could not remember the recipe anymore.  That got me thinking that I needed to quickly document recipes that I have and the one she had given to me so that I can actually confirm some of those recipes. I also did this with recipes I had gathered whilst working throughout most parts of Nigeria. I felt it was my place to document Nigerian food in a way that I believe the global audience and Nigerians themselves would appreciate. Yes, there were a couple of recipe books largely focused on recipes but the story side of the relationship Nigerians have with their food was not told– this was my  inspiration for “Memories on a Platter.” AFRO:  What do you want readers to take away from your book ? IU:  The book “Memories on a Platter” is a way for me to preserve the Nigerian food culture. My dream is for Nigerians to better understand the relationship they have with food. I’ve been seeing a lot of fusion food lately and I worry that over time we may lose the originality of our dishes. Someone needs to document this, and that’s what I’ve started to do. I want younger chefs to know our ingredients and how they’ve been traditionally used so they can draw inspiration from them and adapt them to today’s reality. Another source of inspiration for this book is the Nigerian diaspora. When you're living far away from home, it's all too easy to disconnect from your cultural roots and heritage. This book serves as a reminder, helping individuals remain anchored to their origins and the significance of our cuisine. Ultimately, it's our food, music, and language that bind us to our culture. Food, in particular, is crucial in maintaining that connection. This book has several objectives: to assist those in the diaspora in maintaining their cultural connections, to motivate aspiring young Nigerian chefs to explore and innovate upon traditional recipes and ingredients, and to acknowledge the profound role food plays in our lives. It goes beyond mere recipes; I've woven in personal stories and incorporated Nigerian languages to illustrate the significance of food in our everyday experiences. Through a variety of situational photographs taken throughout Nigeria—rather than just polished studio images—I aim to vividly portray these dishes. Ultimately, my aspiration is to honor and safeguard the vibrant legacy of Nigerian cuisine and culture. AFRO: What do you want the world to know about Nigerian cuisine ? IU: First of all, I think the world should know that there’s a lot of diversity in our food and our culture. We’re not just about Jollof rice– that’s the first point. The other thing is that we have flavors, layers of flavors in fact, that could be appreciated by the rest of the world. Just as we have appreciated food from other cultures, Nigerian food and its culture is quite vast and diverse and I must say, deep, if I can use that word. The third thing is that whilst  the world has come to appreciate our music, fashion, etc., I think it’s our turn now to showcase our food.  It's high time we share our culture with the world and encourage others to savor our culinary delights. Truly, the ingredients found in many of our traditional dishes are widely accessible, making it easy for anyone to experiment with our recipes. This is the essence of Nigerian cuisine that I wish to introduce to a global audience. AFRO: How are you looking to impact the Nigerian culinary arts scene ? IU: I have several platforms where I continue to discuss Nigerian food and its deep connection to our culture. On YouTube and across most of my social media handles, I’ve shared numerous recipes and will continue to do so. More importantly, I believe Nigeria is beginning to approach food from an intellectual perspective. This year, we held our first Food Summit, and I’m excited that an even larger platform is planned for next year. I was privileged to share my thoughts there, contributing to the effort of helping the younger generation appreciate Nigerian cuisine. As I look forward to 2025, my goal is to organize a variety of immersive events that will help realize this vision. These gatherings will be enhanced by social media, allowing us to spread the dialogue about our culinary traditions and culture to a broader audience. While I do my best to work through my inventory to prevent food waste, I must admit, there are still casualties. It’s always my produce that loses the battle, with fresh herbs and lettuce taking the most damage. Recently, I was told about a product that might solve my food waste dilemma. An inexpensive solution called FreshPaper that could easily slip in the drawer with my produce to prolong its life. Was this paper what I needed to help my leafy greens make it past one week? I set out to find the answer. What is FreshPaper? FreshPaper is plastic-free paper made with organic and compostable ingredients that “naturally slow down spoilage, over-ripening, and wilting.” According to the website, simply add a sheet to your produce drawer or toss it with a bag of lettuce or clamshell of berries and your produce should last at least two to four times longer than if you didn’t use it. This all sounded too good to be true, so of course, I had to test it. Is FreshPaper Effective? To test the product, I bought some lacinato kale and added it to my already full produce drawer, along with one sheet of FreshPaper. I stored the kale in the drawer for three weeks and was amazed by the results. After one week, the kale looked nearly the same as it did the day I bought it. For quite some time, it has been suggested that placing a stainless steel spoon into a bottle of sparkling wine, like champagne, can help preserve its fizz when the cork cannot be reinserted into the bottle's opening. The theory supporting this advice is based on the metal’s ability to help reduce the escape of carbon dioxide from the bottle or can. The internet is filled with anecdotes of this trick working to preserve the sparkles in sparkling wine. But it might be a happy coincidence. SOUTH LAKE TAHOE, Calif. – Once a year Forest Suites Resort hosts an Adopt A Day of Nourishment (AAD) and their sponsorship involves donating $350 to help cover the evening’s meal costs. An AAD sponsorship also involves sending 3-5 of their team members to volunteer their time assisting the Bread & Broth volunteers with the many tasks needed to serve a hot, full-course meal and to pack bags of food to give out to the dinner guests to take home to help with meals the remainder of the week. The team at Forest Suites Resort, consisting of Ernesto Jimerez, Anahi Robles, and Oswald Rodriguez, successfully provided a wholesome dinner for 127 guests. They also assisted in packing food bags, arranging the dessert and beverage station, and concluded their AAD volunteer shift with the cleanup and breakdown of the meal. Discovery of 8,000-year-old 'focaccia' alters our understanding of ancient culinary practices

Ancient pottery reveals the story of humanity's earliest skilled bakers. BARCELONA — A new archaeological study has revealed that some of humanity’s earliest farmers weren’t just making basic flatbreads — they were crafting something closer to modern-day focaccia, complete with seasonings and oils. This discovery dates back to communities that lived between 6400 and 5900 BCE in what is now Syria and Turkey. While it’s long been known that ancient peoples were baking bread, researchers now have evidence that these early cooks were far more sophisticated than previously thought. Using specialized clay trays, they were creating both plain loaves and more elaborate recipes that included animal fats and plant oils. Their study shows how experimental cooking has been part of human culture for at least 8,000 years. These ancient clay trays were essentially the world’s first non-stick baking pans. Made from coarse clay, they featured distinctive grooved patterns on their inner surfaces, not unlike modern bread pans, but with scoring that helped prevent the dough from sticking. These vessels, which archaeologists call “husking trays,” were previously thought to be used mainly for processing grains. CNN  —  Few events in culinary history spark as much debate as the choice made by a Canadian chef in the 1960s to top a ham pizza with canned pineapple. When Sam Panapoulos created what he and his brother-slash-partner-in-crime dubbed Hawaiian pizza, it was a breach of Italian culinary protocol that would echo down through the ages. Sixty years later, the debate over whether pineapple should be included on pizza continues to split nations, communities, and even families. A pizzeria in Norwich, England, has boldly embraced the controversial topping by adding pineapple to its online delivery menu — albeit at a staggering price of £100 (approximately $122). Surprisingly, this isn’t the highest price charged for pineapple in the past year — a $395.99 red-hued variant hit the California market last May — but it’s considerably higher than the dollar that a can of tinned pineapple would typically cost in a UK superstore. “Yeah, for £100 you can have it. Order the champagne too! Go on you Monster!,” jeers the new menu listing for Hawaiian on Lupa Pizza’s account on UK food delivery app Deliveroo. It stands alongside well-loved classics like Napoli, Meatball, and Pepperoni, each priced at $17 or below. "Say 'no' to pineapple." “I refuse to use pineapple,” Lupa’s head chef Quin Jianoran shares with CNN Travel during a phone interview. The Panapoulous brothers have combined "the sweet and sour tastes of Chinese cuisine with a classic Italian staple," he notes. "It sparks quite a debate, as there are those who absolutely adore it and others who can't stand it. We're simply making a bold statement." Lupa’s head chef Quin Jianoran told CNN Travel that there have been no orders placed for the £100 pizza so far, but the online response has “dramatically shifted. It’s honestly hard to believe.” The restaurant has promised to put pineapple on its monthly special board if the results of a poll in the Norwich Evening News, a local newspaper, go in the fruit’s favor. The yellow underdog is making significant strides, currently leading the vote on the pineapple-on-pizza debate with an impressive 62%. However, it's still uncertain if the £100 price point will reflect the actual dish served at the physical restaurant. Jianoran chuckles, “My opinions could shift at any moment! It might be £200, or perhaps just £2—who can say for certain?” While pineapple has traditionally been shunned by Italian pizza-makers, a year ago Napoli pizza maestro Gino Sorbillo introduced a divisive ananas pizza to his menu in Via dei Tribunali, the best-known pizza street in Naples, the world capital of pizza. His intention, he said, was to “combat food prejudice.” The debate over pineapple pizza has at times become so heated it almost triggered a political crisis. In 2017, the then Icelandic president, Guðni Th. Jóhannesson, had to clarify that he would not be banning pineapple pizza in his country — and that he did not even have the power to legislate such a move — after his disdain for the combo went viral. Although Jianoran leans towards classic toppings, his top choice for pizza is New York-style, where there are virtually no restrictions on the toppings they use. Enhance Your Beef Stew by Preparing It the Vietnamese Style

Easy Recipes / Getty Images While my father’s family is from northern Vietnam, he and my grandmother, Ah Ma, often enjoyed the dishes of southern Vietnam, such as bò kho (Vietnamese beef stew). Growing up, I especially loved the nuanced flavors in bò kho, thanks to its lovely mix of ingredients such as star anise, lemongrass, and fish sauce. The three work well together to add depth and aroma to the broth. Bò kho can also be spicy with chilies cooked in the broth or served with Thai chili peppers. You can enhance nearly any beef stew recipe by incorporating the flavorful ingredients characteristic of bò kho. When preparing more Western-style beef stews that tended to be somewhat bland or overly sweet for my palate (thanks to the onions and carrots), I decided to blend bò kho elements into the broth for a richer taste. Three Key Components for an Improved Beef Stew Star anise adds aroma, slight pepperiness, and earthy undertones. Fish sauce amps up all the umami in the stew, and it’s already my go-to beef stew upgrade. As for lemongrass, it brings a citrusy aroma and herbaceousness. Together, these three ingredients will take almost any beef stew to new heights. How to Infuse Your Beef Stew with Vietnamese Flavors To start, use your favorite beef stew recipe as the base. You can incorporate the lemongrass, fish sauce, and star anise in a few ways. One way is to marinate the beef with lemongrass and fish sauce while reserving the star anise (two to three pods) to incorporate directly into the broth. Mince the lemongrass and grind it into a paste to marinate the beef (use a mortar and pestle or small food processor). Then, save the marinade and add it to the broth as well. Toward the end of the cooking process, mix in the fish sauce, starting with approximately one tablespoon. Taste the broth to determine if you want to add more. Prior to serving the beef stew, feel free to remove the lemongrass stalks and pieces of star anise. Having given your beef stew a Vietnamese spin, consider serving it with steamed white rice instead of bread or mashed potatoes. Finally, for spicy food lovers, don’t forget the Thai chili peppers or a squirt of sriracha. As you enjoy it, I hope it brings as much warmth to your dinner table as it has to mine. Add the chicken, season with salt and pepper, then let it marinate for at least an hour. Meanwhile, preheat your oven to 160C (140C Fan/ Gas 3). Using a colander, drain the marinated chicken into a large pot, making sure to keep the shallots, bay leaves, and thyme. Gently dry the chicken with paper towels. In a deep, oven-safe frying pan or casserole dish, heat the oil along with 50 grams (approximately 1.75 ounces) of butter. Place the chicken breasts in the pan and sear them over medium-high heat for five to ten minutes per side, until they achieve a uniform golden-brown color. Based on the size of your pan, you might need to cook the chicken in multiple batches. After browning, use a slotted spoon to take the chicken out and set it aside for later use. Put the pan containing the wine marinade on high heat and let it reach a boil. Once boiling, reduce the heat and let it simmer for five to ten minutes, or until the liquid has decreased by one-third. In a mixing bowl, blend flour with 150ml (five fluid ounces) of water until the mixture is smooth. Slowly incorporate some of the hot wine into this blend, then transfer it back into the pan containing the rest of the wine. Continue to heat this mixture until it's ready for use. In a separate pan or dish, cook the bacon over high heat for about 10 minutes, or until it becomes brown and crispy. Incorporate the shallots and allow them to cook for an additional 10 minutes until they become tender. Next, mix in the hot wine sauce, tomato purée, sugar, bay leaves, thyme, salt, and pepper. Raise the heat to bring the mixture to a boil, stirring continuously until it reaches a thicker consistency. Place the chicken back into the pan, bring it to a boil, then cover and bake for 20 to 25 minutes until fully cooked. Meanwhile, in another pan, melt the rest of the butter and sauté the mushrooms for about five to ten minutes until they are tender. Incorporate them into the casserole right before serving. Take out the bay leaves and thyme, then dish out the steaming hot casserole alongside creamy mashed potatoes and finely shredded cabbage.

Plant irrigation Coconut, maple, and cactus water are often touted as being hydrating and a better choice than sports drinks. These trendy drinks may have some benefits, but depending on your goals, you may want to consume them sparingly. “Coconut water is extremely hydrating but quite high in carbs and sugar, so it’s best to drink it in moderation,” says Jason Kozma, a celebrity personal trainer based in Santa Monica. And while maple syrup has a lower glycemic index than your typical granulated sugar, per the Cleveland Clinic (meaning it won’t cause as much of a spike in your blood sugar), it’s still “just a natural sugar,” Kozma says, “and there’s nothing special about it” in terms of helping with hydration. Cactus water still has skeptics as well. Though the Mayo Clinic reports that there is research suggesting it can mitigate some of the effects of a hangover, it may still be too soon to label it a superfood. Still, if you particularly love one of these options and it helps you stay hydrated, go for it — just in moderation. Flavored water Flavored waters are a great, hydration-forward alternative to coconut, maple, or cactus water, and easy to make on your own, Kozma says. “Just add lemon, lime, mint, or watermelon for a refreshing combination,” he explains. Hadley also suggests this idea. “Create your own delightful ‘spa water’ by infusing a pitcher of water with your preferred mix of fruits, cucumber, mint leaves, or basil,” she explains. “Let it chill in the fridge overnight and savor it for the next one to three days.” Iced tea or iced coffee Caffeinated tea or coffee as a hydration drink? Yes, it’s true: these hot-weather staples can be great sources of antioxidants when freshly brewed, but some of us skip it because caffeine is often touted as a diuretic. Well, good news, because “this myth has been debunked,” says Tina Martini, fitness trainer, chef, and author of Caffeinated beverages only have this diuretic effect — meaning they make you urinate more — when consumed in large amounts, Hadley says. “However, caffeinated drinks still have a net hydrating effect,” she explains, “so enjoying that iced latte this summer will, indeed, help you stay hydrated.” Athletic beverages Athletes often turn to sports drinks to replenish electrolytes—like potassium and sodium—that are lost through sweating. However, for most of us engaging in regular exercise, such intense options may not be necessary. Additionally, these beverages frequently contain unnecessary additives. “In general, they are loaded with too many chemicals,” explains Martini. “Creating your own is a better option.” Alternatively, you can enhance your water by adding small amounts of pink Himalayan salt. “The salt’s unique color comes from Astaxanthin, a phytonutrient that helps eliminate free radicals from our blood,” Martini notes. Here’s her take on a healthy, electrolyte-packed hydration solution: Traditional "Greatorade" 1/2 cup of water 1/4杯柠檬汁 1/4杯橙汁 2 tablespoons of lime juice 1-2 teaspoons of honey, agave nectar, or natural maple syrup a dash of pink salt a dash of cayenne pepper ½ teaspoon of magnesium powder (increase to one teaspoon if you are susceptible to muscle cramps) Stir and savor! When it comes to hydration, “electrolytes are a good place to start,” she says. Vitamin-enriched water Vitamin-enriched water is a popular sipper that seems like the perfect beverage, but unfortunatley, it isn’t so. “It is really more of an adult Kool-Aid, plus many of the vitamins are not absorbed into the body,” says Martini. Indulge in fruits and veggies instead, since they’re jam-packed with vitamins and fiber. If you plan on consuming water with added vitamins, make sure to check the labels because the sugar content can be really high. Hydration advice: Try drinking with a straw. Whichever of these refreshing beverages you choose, consider grabbing a reusable or glass straw to sip it through. “Research suggests that drinking through a straw may actually help you consume more fluids without even realizing it,” Hadley says. A notice from the U.S. Department of Agriculture's Food Safety and Inspection Service (FSIS) revealed that a consumer suffered a "dental injury" after taking a bite of the taquito. The notice states that the recall specifically concerns 20-ounce packages of Casa Mamita Chicken & Cheese Taquitos produced by Bestway Sandwiches, Inc., produced on July 3, 2024, and September 25, 2024, according to CW affiliate WGN-TV. While the release did not state when did not say when the affected items were removed from sale at Aldi, inspectors noted on Saturday they were “concerned that some product may be in consumers’ freezers." Consuming green tea is associated with a reduced occurrence of white matter lesions in the brains of elderly individuals.

Image Source: Unsplash/CC0 Public Domain A study conducted by the Kanazawa University Graduate School of Medical Sciences has revealed a noteworthy association between increased green tea intake and a reduction in cerebral white matter lesions among older individuals who do not have dementia. The results indicate that consuming three or more cups of green tea each day could be beneficial for maintaining brain health, whereas coffee consumption did not demonstrate a significant impact. Green tea and coffee are recognized for their neuroprotective properties and rank as the second and third most popular beverages worldwide, following water. Previous studies have indicated a connection between the consumption of tea and coffee and cognitive advantages. However, there is a lack of research focusing specifically on their direct impact on structural changes in the brains of older adults. Cerebral white matter lesions, which frequently signal small vessel disease, have been linked to cognitive deterioration, vascular dementia, and Alzheimer's disease (AD). This study sought to assess how the intake of green tea and coffee influences the volume of white matter lesions, hippocampal size, and overall brain volume, utilizing magnetic resonance imaging (MRI) data for analysis. The study, "Green tea consumption and cerebral white matter lesions in community-dwelling older adults without dementia," published in npj Science of Food, was conducted as part of the Japan Prospective Studies Collaboration for Aging and Dementia, a large-scale, multisite observational study involving eight research centers in Japan. Data was gathered from 2016 to 2018, involving dietary evaluations, MRI imaging, and cognitive assessments of 8,766 individuals aged 65 and above. To assess daily consumption of green tea and coffee, a Food Frequency Questionnaire was employed, classifying intake into four categories: 0–200 ml, 201–400 ml, 401–600 ml, and 601 ml or more. Brain MRI scans yielded information regarding the volume of white matter lesions (WML), hippocampal volume (HV), and total brain volume (TBV). Sophisticated statistical models were utilized to account for confounding variables such as demographic information, health status, lifestyle choices, and genetic predispositions related to Alzheimer's disease. The study omitted participants diagnosed with mild cognitive impairment (MCI), dementia, or those with incomplete information, resulting in a final group of 8,766 individuals. Once confounding factors were accounted for, a notable link emerged between increased green tea intake and reduced WML volumes. Participants who consumed 600 ml of green tea each day exhibited WML volumes that were 3% less than those who drank 200 ml or less, while individuals consuming 1,500 ml daily showed a 6% decrease in WML volumes compared to the reference group. There were no notable links found between the consumption of green tea and the volumes of the hippocampus or the overall brain. Additionally, coffee intake did not have a significant impact on white matter lesion volume, hippocampal volume, or total brain volume. The research additionally investigated various subgroups classified by their depression status and whether they carried the ApoE ε4 allele. Notable decreases in WML volumes were found exclusively among individuals who did not have depression or the ApoE ε4 allele, correlating with higher intake of green tea. Research indicates that the antioxidant and anti-inflammatory characteristics of green tea catechins, particularly epigallocatechin gallate, could help reduce vascular injury and enhance brain health, although the individual components have not been experimentally confirmed as the direct cause. It's conveniently accessible, boasts an impressive dining scene, has a wonderful community, and attracts a lot of tourists,” Berry mentioned. The latest Mi Vida location is only the first step in their expansion plans for Philadelphia. The team is currently in discussions for a second deal to introduce another one of their concepts to the city, with aspirations to launch up to four new venues in the greater Philadelphia area over the next few years. In addition to its expansion in Philadelphia, Knead Hospitality is set to make its debut in the Virginia Beach area this year. Recently, I decided I wanted to add a few new soups to the lineup, so I set out to simplify a recipe I had been reserving for special occasions—Italian wedding soup. Italian wedding soup features small meatballs, robust greens, and tiny pasta, creating a satisfying meal-in-a-bowl, topped with a sprinkle of Parmesan cheese and a splash of quality olive oil. Typically, this dish requires a lot of effort, so I don’t prepare it frequently. However, after discovering a smart shortcut from one of my editors, I’ve transformed this cozy soup into a weeknight staple. Now, I find myself making it all the time! The term Italian wedding soup is a misinterpretation of the Italian phrase “minestra maritata,” which translates more closely to “marriage soup.” This name reflects the combination of meatballs and leafy greens, akin to a union. Anyone who is married knows that a wedding differs significantly from a marriage. A wedding is a celebration—joyful and lighthearted! In contrast, a marriage involves achieving harmony and making concessions. This variation of Italian wedding soup might be better named Italian marriage soup, as it simplifies the labor-intensive process of crafting numerous small meatballs by using Italian sausage instead. This adaptation cuts the cooking time in half by utilizing pre-seasoned Italian sausage rather than crafting meatballs from scratch. Begin by shaping one-inch balls from Italian sausage and searing them in olive oil in a sturdy pot. Make sure to do this in batches to avoid overcrowding the pan. Once browned, remove the meatballs and use the same pan to sauté diced onions and minced garlic until they become tender. Pour in the chicken stock and bring the mixture to a boil. Once boiling, incorporate the pasta and sausage balls, allowing it to simmer. After a few minutes, toss in your greens; I like using escarole for its rich, bitter flavor, but spinach is also an excellent fast-cooking option. Finish the dish with a splash of olive oil and a generous sprinkle of Parmesan cheese on top. Suggestions for Preparing Italian Wedding Soup For this simplified version, I’m just using onions and garlic, but celery and carrots are common in other versions of Italian wedding soup. To make prep even easier, use store-bought mirepoix. It’s easiest to roll the sausage balls when the sausage is cold. Use sausage straight from the fridge and wet your hands before rolling. For more depth of flavor, use 1 cup of white wine to deglaze the pan after sautéing the onions and garlic.  Make sure the sausage balls are small (about an inch in diameter) so they cook quickly. Simply Recipes / Image by Rachel Vanni / Culinary Styling by Tiffany Schleigh How to Prepare My Simple Italian Wedding Soup To serve approximately 6 people, you'll require: 1 pound mild Italian ground sausage 2 tablespoons olive oil, plus more for drizzling 1 medium yellow onion, diced 4 cloves garlic, minced 2 quarts (8 cups) chicken stock 1 cup small pasta, such as ditalini, acini de pepe, or orzo 4 packed cups (4 to 5 ounces) spinach or escarole, stems removed and roughly torn 2 teaspoons kosher salt, or as needed 1/2 teaspoon freshly ground black pepper, or as needed Shape the ground sausage into 1-inch "meatballs" and arrange them on a plate. In a large Dutch oven, heat the olive oil over medium heat. Cook the meatballs, turning them to brown on all sides, for approximately 10 minutes, doing this in batches if needed. Once cooked, move them to a plate and cover to keep them warm. In the same pot (no need to clean it), cook the onion until it starts to become tender, which should take around 4 minutes. Then, add the garlic and continue to sauté for an additional 1 to 2 minutes until it becomes fragrant and soft. Pour in the chicken stock and bring it to a boil, making sure to scrape up the browned bits stuck to the bottom of the pan. Lower the heat to a simmer, then incorporate the pasta and the browned meatballs. Let it simmer until the pasta is just shy of al dente, following the package instructions, which should take around 8 minutes. Remember to stir occasionally to prevent the pasta from adhering to the pot's bottom. Incorporate the spinach into the mixture and let it simmer until the spinach turns deep green and wilts, while the pasta finishes cooking, which should take an additional 1 to 2 minutes. Adjust the flavor with salt and pepper, and taste to your liking. For serving, you may choose to drizzle some high-quality olive oil on top and add a sprinkle of Parmesan cheese. Leftover food can be kept in a sealed container in the fridge for as long as 5 days, or it can be allowed to cool down completely and then frozen for a maximum of one month.

"In a voice-over, she shares, 'The trick I picked up from my mom is to store your ice cream in the freezer upside down.'" As she pulls it from the freezer and lifts the lid, not a single ice crystal is visible. “It’s never frozen. There’s no frost at all. It’s incredible,” she gasps in delight. “Who would have imagined???” the TikToker wrote in the caption of her video, which garnered more than 758,000 views. Freezer burn occurs when food is not properly sealed and exposed to air in the freezer. This exposure causes moisture to evaporate from the surface of the food, leading to the formation of ice crystals. As the moisture leaves, the food can become dry and develop discolored spots, which can affect its texture and flavor. To prevent freezer burn, it’s important to use airtight packaging and remove as much air as possible before freezing.  Freezer burn happens when frozen food is exposed to dry air and loses moisture. This leaves the food drier and discolored. Another cause of freezer burn has to do with freezer temperature. If it’s too cold, freezer burn can occur. And ice cream is particularly susceptible to freezer burn as it has a higher moisture content than most freezer items. The Daily Dot contacted @_gable through a comment and direct message on TikTok. Audiences experiment with the trick. Audiences expressed their excitement about trying out the hack. "Mmmmm, I can't wait to give this a shot next time! Those who were also aware of the trick mentioned that it is effective with different types of dairy items. "One user mentioned, 'It helps keep sour cream in the fridge without that watery separation forming between uses.'"
